1 1-inch diameter meatball ball w/ light drizzle of sauce = 107 calories, 3 fat, 7 carb, 13 protein
Recipe yields approximately 16 meatballs
Ingredients:
Meatballs -
2 pounds 99% lean ground chicken breast
1/3 cup Panko breadcrumbs
1/2 cup chopped green onions
2 tablespoon grated ginger
4 cloves garlic, minced
2 teaspoon soy sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoon Sriracha sauce
Firecracker Sauce-
1/4 cup light mayonnaise
4 tablespoons plain non-fat Greek yogurt
2 tablespoons honey (add another TBSP of honey if you want it sweeter)
1 tablespoon Sriracha sauce (use less Sriracha for less heat)
1 teaspoon rice vinegar
Instructions:
Preheat oven to 400 degrees F.
In a large bowl, combine ground chicken breast, Panko, green onions, ginger, garlic, soy sauce, salt, and pepper. Mix well.
Form the mixture into 1-inch meatballs. Place the meatballs on a baking sheet lined with oil sprayed aluminum foil.
Bake for 20 minutes, or until cooked through.
While the meatballs are baking, make the firecracker sauce.
In a small bowl, combine light mayonnaise, Greek yogurt, honey, Sriracha sauce, and rice vinegar. Mix well.
Serve the meatballs with the firecracker sauce for dipping, and garnish with a drizzle of Sriracha and green onions if desired. Enjoy!
