REV RECIPE: Blueberry Cheesecake Protein Ice Cream

Sweet, creamy, high in protein, and sure to please! Have this Blueberry Cheesecake Protein Ice Cream for breakfast, as a snack, or for dessert. Enjoy it whenever you please! Be sure to save some extra blueberry compote and a drizzle of honey to top your ice cream off before you eat it! DEEEEEE-LISH!

Makes 8 servings

Fat: 5 grams

Carbohydrate: 18 grams

Protein: 24 grams


Ingredients

  • 2, 16 oz containers of 1% whipped cottage cheese

  • 3 cups of frozen blueberries

  • 4 tablespoons of brown sugar Stevia mix

  • 2 scoops Apollon Nutrition 50/50 Formula-X vanilla protein powder (Available at the Revolutionize storefront or at this link https://www.apollonnutrition.com/?aff=33 with promo code “APOLLONSTRONG”

  • 1/2 cup light cream cheese

  • 2 tablespoons of honey


Instructions

Note: Although I used a bowl and a hand mixer in this video, I highly recommend using a food processor.

  1. Place your cottage cheese, 2 tablespoons Stevia/brown sugar mix, protein powder and light cream cheese in a food processor. Blend until completely smooth and creamy. Set aside.

  2. In a pan over medium to low medium heat, add your blueberries, and 2 tablespoons of Stevia/brown sugar mix. Stir occasionally until heated through and slightly broken down.

  3. Pour your cheesecake ice cream mixture into 2 shallow Tupperwares.

  4. Drizzle some of your blueberry compote on top and glide a knife through, to blend it in slightly, as seen in the video.

  5. Make sure to save some of your extra blueberry compote to drizzle on top of your ice cream when you go to serve it!

  6. Drizzle each Tupperware with 1 tablespoon honey

  7. Cover and freeze for 3 hours. (Note: I froze mine over night so it had to thaw through before eating it the next morning.)

  8. Each Tupperware that I use made four servings. Two Tupperwares give me eight servings total.

  9. Place one serving of your protein ice cream on a dish or in a bowl and ladle a tablespoon of the leftover blueberry compote on top. Feel free to garnish with a little fat free whipped cream (not included in macros). ENJOY!!!
